Sake Steamed Wild Salmon




Pomegranate Poached Pears with Berry-Berry Sauce


Servings: 6



Preparation

Peel pears, leaving stems intact. Slice a little off the bottom of each pear so they stand up.

In a large saucepan, place pears standing up snugly together. Pour in pomegranate juice and add cinnamon stick and cloves. Gently simmer, covered, for about 15 to 20 minutes until pears are tender. Gently remove pears and refrigerate until ready to serve.

Reduce poaching liquid over high heat until it becomes syrup. In blender or food processor, blend together all sauce ingredients for 2 to 3 minutes until very smooth and creamy. Chill syrup until serving.

To serve, place pear on dessert plate and pour pomegranate syrup over pear, followed by Berry-Berry Sauce. Sprinkle a few fresh blueberries on plate and top pears with a sprinkle of red goji berries.


Pomegranate Poached Pears with Berry-Berry Sauce


Ingredients

Poached Pears
6 medium pears, ripe but firm
2 cups unsweetened pomegranate juice
1 whole cinnamon stick
6 whole cloves

Garnish
Goji berries for garnish
Fresh blueberries for garnish

Berry-Berry Sauce
2/3 cup raw cashews, unsalted
½ cup frozen strawberries, defrosted
1 cup frozen blueberries, defrosted
8 pitted dates
1 cup soy milk
